Founded in 1991 in the Cascapédia Valley, at the heart of the Gaspésian Appalachians, Cascapédia Finest is an artisanal gastronomic house whose products all originate from a single territory. Maple syrup, maple butter, forest honey harvested from the same sugar bush, boreal concentrates from the surrounding forest — every creation bears the signature of a single place, crafted to the same standards, standing under the same name.

The house's vision is precise: to become an international reference in Nordic terroir gastronomy, in the tradition of great houses whose every product embodies a territory rather than a generic category. Here, quality is not a declared intention — it is the result of rigorous, patient work, repeated season after season. Jean-Philip Bujold carries this legacy toward international reach, without ever betraying the essential.

Gesgapegiag — "The Great River"

One Territory, One Standard

The Gaspésian Appalachians have shaped this territory for millennia: long winters that concentrate sugars in the sap, mineral soils of shale and limestone, a boreal forest of exceptional botanical richness. This water–rock–forest triptych gives each of our products a signature that no other territory can replicate.

From balsam fir to chaga harvested from birch trees, every raw material comes from this same forest, transformed on-site according to mastered protocols that preserve the aromatic complexity of the living.

Heritage & Continuity

The Mi'gmaq peoples of Gesgapegiag named this river long before the first cartographers. The great river flows through the heart of the Appalachians, carrying centuries of human presence, Atlantic salmon fishing, and forest knowledge passed from generation to generation.

Since 1991, the house has perpetuated this rootedness: a precise territory, mastered gestures, an unchanged promise to those who trust our name.
